Place a large pot on medium heat. Add vegetable broth, water, sliced ginger, smashed garlic, dried shiitake mushrooms, and kombu (if using). Bring to a gentle simmer.

Lower heat to medium-low and simmer gently for 20 minutes to extract flavors from mushrooms, ginger, and kombu. Do not boil vigorously to avoid bitter flavors from kombu.

After 20 minutes, remove kombu (if used). Taste the broth and remove mushrooms; reserve the rehydrated shiitake caps for slicing and adding to bowls later. Keep the broth warm on very low heat.

In a small bowl, whisk together 4 tbs white miso paste with 1 cup of warm broth until smooth to avoid lumps. Add the miso slurry back into the pot off the heat or on the lowest setting and stir gently—do not boil the broth after adding miso to preserve probiotic qualities and delicate flavors.

Stir in soy sauce, mirin, and 1 tsp sesame oil. Keep warm and adjust seasoning later if needed.

Aromatics & flavor base

While the broth simmers, heat 1 tbs vegetable oil in a skillet over medium heat. Add the diced onion and cook until translucent and beginning to brown, about 5–7 minutes.

Add the sliced reserved shiitake caps and cook until they release moisture and brown slightly, 3–4 minutes. Add the thinly sliced scallion whites (reserve greens for garnish) and cook 1 minute more.

Add 1 tbs miso paste to the skillet, stir to warm and bloom the miso with the vegetables for 30–45 seconds, then transfer everything (including juices) into the simmering broth and stir to incorporate. This deepens the savory base.

If making soft-boiled eggs: bring a small pot of water to a rolling boil, lower eggs in with a slotted spoon, boil 6 minutes for runny yolk, then transfer to an ice bath for 5 minutes. Peel and halve just before serving.

Bring a separate pot of water to a rolling boil. Add ramen noodles and cook according to package instructions (usually 2–4 minutes for fresh, 4–6 minutes for dried) until just tender. Do not overcook. Drain and briefly rinse under warm water to remove excess starch if desired.

In a medium skillet, quickly sauté sliced mushrooms (8 oz) over medium-high heat with a splash of oil until golden, 4–5 minutes. Season lightly with a pinch of salt and pepper. If using bok choy, blanch leaves in boiling water 30–45 seconds and shock in ice water; if using spinach, it can be wilted directly in hot broth.

To assemble bowls: divide cooked noodles between 4 bowls. Ladle hot miso broth over noodles, then arrange toppings: sautéed mushrooms, spinach or bok choy, corn, bean sprouts, halved soft-boiled eggs, nori strips, and scallion greens. Sprinkle toasted sesame seeds and drizzle chili oil to taste.

Taste each bowl and adjust seasoning as needed with salt (up to 1/2 tsp more across the whole pot) and a splash more soy sauce if desired. Grind a bit of white or black pepper over the bowls.
