Clean and trim

If your tentacles are not pre-cleaned, rinse under cold water, remove the beak and any cartilage. Pat dry thoroughly with paper towels — dry surface ensures better sear.

Place tentacles in a shallow bowl. Sprinkle 1 tsp kosher salt and 1/2 tsp black pepper evenly, then add 2 tbs lemon juice and 1 tbs neutral oil. Mix gently to coat and let sit 10–15 minutes in the refrigerator. This lightly firms the flesh and seasons.

Make the sauce

In a small bowl combine 2 tbs gochujang (or sambal), 1 tbs soy sauce, 1 tbs rice vinegar, 1 tbs honey, 1 tsp sesame oil, minced garlic, grated ginger and 1/2 tsp gochugaru (if using). Whisk until smooth. Taste and adjust: add more honey if too sharp or more gochujang if you want extra heat. Reserve about half the sauce for finishing glaze and set the other half aside for brushing while cooking.

If you prefer a thinner glaze for brushing, mix 1–2 tsp water into a portion of the sauce to loosen to brushing consistency.

Preheat and oil

Heat a heavy skillet or cast-iron pan over medium-high heat until very hot (or preheat grill to high). Lightly brush pan or grill grates with 1 tbs neutral oil so tentacles won't stick.

Sear the tentacles: Place tentacles in the hot pan in a single layer, taking care not to crowd. Cook without moving 2–3 minutes until the undersides develop a deep, slightly charred crust. Flip and cook 1.5–2 minutes more. Total cooking time is short — you want a good sear but avoid overcooking which makes squid tough. If tentacles are very large, cook in 2 batches or cut in half.

Glaze and finish

During the last 30–45 seconds of cooking, brush the reserved spicy sauce over the tentacles, turning once so glaze caramelizes lightly. If using the thinned sauce for brushing, apply a couple of times to build a sticky coating. Remove tentacles to a cutting board and let rest 2 minutes.

Slice tentacles crosswise into 1–1.5 inch pieces if desired. Sprinkle with toasted sesame seeds and sliced scallions. Add chopped cilantro or parsley if using. Serve immediately with lemon or lime wedges for squeezing over the top.

Optional serving suggestion: offer extra sauce on the side for dipping and a bowl of steamed rice or a crisp salad to balance the heat.
