Prepare aromatics

Heat a medium saucepan over medium heat. Add sesame oil and the neutral oil, then add minced garlic and minced ginger. Sauté 30–45 seconds until fragrant but not browned.

Add chili bean paste

Add the chili bean paste (doubanjiang) to the aromatics and cook, stirring, 30 seconds to bloom the chile flavors.

Build the broth

Pour in the chicken or pork broth and 1 cup water, raise heat to bring to a gentle simmer. Add soy sauce and mirin. Reduce heat to maintain a low simmer for 8–10 minutes to marry flavors.

Integrate miso

Place the white and red miso in a small bowl. Ladle about 1 cup of hot broth into the bowl and whisk until miso is fully dissolved (this prevents lumps). Stir the dissolved miso back into the simmering pot off the heat. Keep the pot warm but not boiling—boiling miso can dull its flavor.

Finish broth

Stir in chili oil to taste and adjust seasoning with additional soy sauce (if needed) or more miso for depth. Keep broth on the lowest heat while you cook noodles and toppings.

In a small skillet over medium heat, warm the 1 tablespoon neutral oil. Add the white parts of the scallions and the thinly sliced ginger and cook 1–2 minutes until softened and aromatic. Remove from heat and spoon these aromatic pieces into the bottom of each serving bowl (this acts as a base 'tare' and gives a fresh punch to the soup).

Cook the noodles

Bring a large pot of water to a rolling boil. Add the ramen noodles and cook according to package instructions (usually 2–4 minutes for fresh; 4–6 for dried) until just tender (al dente). Stir occasionally to prevent sticking. Reserve 1/2 cup of noodle cooking water, then drain the noodles quickly.

Blanch greens and warm proteins

If using baby spinach or bok choy, drop into the boiling noodle water for 20–30 seconds until bright green and tender; remove and drain. If using chashu or thinly sliced pork, quickly warm slices in the hot broth for 30–60 seconds or sear briefly in a hot pan to heat through.

Assemble bowls

Divide the prepared aromatics/tare among 2 bowls. Add half the cooked noodles to each bowl. Pour hot miso broth over the noodles (about 3 cups per bowl) and immediately arrange toppings: 1 soft-boiled egg (halved), warmed pork slices or chashu, blanched greens, 1 tablespoon corn, 1 tablespoon menma, torn nori, and sprinkle green scallions and toasted sesame seeds. Drizzle additional chili oil on top if you want extra heat.
