Cook and purée

Place the 2 cups raspberries and 1 tablespoon granulated sugar in a small saucepan over medium heat. Cook, stirring occasionally, until raspberries break down and release juices, about 4–6 minutes.

Strain

Remove from heat and stir in 1 teaspoon lemon juice. Push the mixture through a fine-mesh sieve into a bowl, pressing with the back of a spoon to extract as much purée as possible and discard seeds. You should have about 1 to 1 1/4 cups purée. Allow purée to cool to room temperature (about 15–20 minutes).

Gelatin

Sprinkle 1 teaspoon powdered gelatin over 2 tablespoons cold water in a small heatproof cup or bowl. Let bloom for 5 minutes. After blooming, briefly warm the gelatin to dissolve: place the cup in a bowl of hot water or microwave for 5–8 seconds, stirring until fully dissolved but not boiling.

Stir about 2 tablespoons of the cooled raspberry purée into the dissolved gelatin to temper, then mix that back into the rest of the purée until fully incorporated and smooth. This guarantees the gelatin distributes evenly without clumping.

Chill a mixing bowl and beaters in the refrigerator for 5–10 minutes if possible. Pour 1 cup cold heavy cream into the chilled bowl. Add 2 tablespoons confectioners' sugar and 1 teaspoon vanilla extract.

Whip the cream on medium-high speed until soft peaks form (peaks hold but curl over). Do not overbeat—stop when the cream is light, airy, and holds shape with a slight droop.

Fold the raspberry purée into the whipped cream: add one-third of the whipped cream to the purée and gently fold to lighten it. Then fold in the remaining whipped cream in two additions, using a rubber spatula and lifting from the bottom to keep maximum air. Fold until streaks disappear and the mixture is uniform pink; do not overmix or deflate.

Chill and serve

Spoon the mousse into serving dishes or ramekins (makes about 6 small servings). Smooth the tops or create peaks with the spatula.

Cover each cup with plastic wrap or place in an airtight container and refrigerate for at least 2 hours to set (3–4 hours gives a firmer texture).

Before serving, garnish with fresh raspberries and mint leaves as desired. If the mousse is too firm after extended chilling, let sit at room temperature for 5–10 minutes before serving.
