Crepe Batter
Steep tea
Heat 1 cup warm water (not boiling) and steep 2 tablespoons oolong tea leaves (or 2 strong tea bags) for 4–6 minutes until medium-strong. Strain and let cool to lukewarm.
In a large bowl, whisk together 2 cups all-purpose flour, 2 tablespoons granulated sugar, and 1 teaspoon salt.
In a separate bowl, lightly beat 4 eggs. Whisk in 2 cups whole milk, the cooled oolong infusion (use the full cup), 4 tablespoons melted unsalted butter, and 1 teaspoon vanilla extract until combined.
Gradually whisk the wet ingredients into the dry ingredients until smooth. Strain the batter through a fine sieve to remove lumps and any stray tea leaves. Cover and refrigerate for at least 1 hour (up to overnight) to relax the gluten and allow bubbles to dissipate.
When ready to cook, stir the batter gently. Heat a nonstick or crepe pan over medium heat and brush lightly with butter or oil. Pour about 1/4 cup batter per crepe (adjust depending on pan size) and quickly tilt the pan in a circular motion to spread a thin, even layer. Cook 30–45 seconds until edges lift and underside is lightly golden; flip and cook another 10–20 seconds. Transfer to a plate. Repeat and stack crepes separated by parchment if needed. You should get about 20–24 thin crepes depending on size.
Oolong-Infused Pastry Cream (Crème Pâtissière)
Steep tea for pastry cream
Heat 1 cup warm water and steep 1 tablespoon oolong tea leaves (or 1 tea bag) for 4–6 minutes. Strain and reserve the infusion; cool slightly.
While milk is warming, whisk together 1 cup granulated sugar and 6 egg yolks in a bowl until pale. Add 1 tablespoon cornstarch and whisk until smooth and no lumps remain.
Return the pan to medium-low heat and cook, whisking constantly, until the mixture thickens and comes to a gentle boil (about 2–4 minutes). Continue cooking for 1 minute while whisking to activate the cornstarch.
Remove from heat and stir in 3 tablespoons cold cubed unsalted butter and 1 teaspoon vanilla extract until smooth. Strain the pastry cream through a fine-mesh sieve into a bowl to remove any cooked egg bits or tea fragments. Cover the surface with plastic wrap to prevent a skin and chill until cold, at least 2 hours.
Light Whipped Cream Filling
Chill mixing bowl and whisk or beaters for 10–15 minutes in the freezer (optional but helps).
Beat 2 cups heavy cream with 3 tablespoons confectioners' sugar and 1 teaspoon vanilla extract on medium-high speed until soft to medium peaks form (do not overwhip).
Gently fold about half of the chilled oolong pastry cream into the whipped cream to create a lighter, mousse-like filling. Reserve the remaining pastry cream for either additional layers or to serve alongside.
Peach Components
Place 4 cups thinly sliced peaches in a bowl. Add 2 tablespoons granulated sugar and 1 tablespoon lemon juice. Toss gently and let macerate for 15–30 minutes until juicy but still slightly firm. Drain excess liquid, reserving a tablespoon if needed to thin the jam glaze.
If glazing the top, warm 3 tablespoons peach or apricot jam with 1 tablespoon water in a small saucepan or microwave until loose and brushable; strain if necessary.
Assembly & Finish
Place one crepe on a cake board or plate as the base. Spread a thin layer (about 2–3 tablespoons) of the whipped pastry cream mixture over the crepe, using an offset spatula to a thin, even layer.
Arrange a single even layer of thin peach slices over the cream (use enough to cover but keep thin to avoid bulk).
Place another crepe on top and repeat: 2–3 tablespoons cream, peach slices. Continue stacking crepes, alternating cream and peaches, until you've used most crepes. For every 3–4 layers you may omit peaches to create pure cream layers for structure. Reserve 2–3 crepes for the top and final smoothing.
Finish with a crepe and spread a thin final layer of the whipped pastry cream on top and very thinly around the sides to seal. For a clean mille crepes look, refrigerate the assembled cake for 30–60 minutes so it firms up.
If using jam glaze, lightly brush the top with the warmed jam. Dust edges or top with 1 tablespoon powdered sugar if desired and garnish with fresh mint leaves or small peach slices.
Chill the cake for at least 2 hours (ideally 4 hours or overnight) before slicing. Use a hot, dry knife wiped between cuts to make clean slices.
