Heat water and steep tea
Bring 12 oz (about 355 ml) of water to just under a boil (about 195-200°F / 90-93°C). Place 2 tsp oolong tea leaves into a teapot or heatproof container. Pour the hot water over the leaves and steep for 3–4 minutes for a balanced strength. Taste at 3 minutes and extend up to 4 minutes if you prefer a stronger tea.
After steeping, strain the tea leaves and transfer the brewed oolong to a heatproof container. Allow the tea to cool at room temperature for 10–15 minutes, then chill in the refrigerator for another 10–15 minutes so the tea is cold but not iced down. You should end up with about 8–10 oz of brewed tea after slight evaporation; if you have more, measure and adjust milk ratio later.
Peach Syrup
Make quick peach syrup
In a small saucepan, combine 1 cup chopped fresh peach, 2 tbsp granulated sugar, and 2 tbsp water. Cook over medium heat, stirring occasionally, until the peaches break down and the sugar dissolves, about 5–7 minutes.
Once softened, mash the mixture gently with a fork or potato masher to release more peach juices. Add 1 tsp fresh lemon juice, stir, and simmer another 1 minute. Remove from heat.
Strain the peach mixture through a fine-mesh sieve into a small bowl, pressing on solids to extract the syrup and flavor. Discard solids (or reserve as compote for another use). You should have roughly 3–4 tbsp of peach syrup. Cool to room temperature before assembling the drink.
Milk Tea Assembly
Combine tea and syrup
In a cocktail shaker or mixing glass, add about 4–6 tbsp (adjust to taste) of the cooled peach syrup and the chilled oolong tea. If you prefer a sweeter drink, add 1 tsp simple syrup or honey here. Stir or shake gently to combine.
Add milk and ice
Add 3 oz milk to the tea-syrup mixture. Fill a serving glass with 1 cup ice cubes. Pour the tea-peach-milk mixture over the ice. Give a gentle stir to combine. Taste and adjust sweetness or peach intensity by adding more syrup or milk to balance.
Garnish with 2 peach slices on the rim or floated on top. Serve immediately with a straw.
