Prepare oysters

If using fresh shucked oysters, drain them well on paper towels and gently pat dry so excess moisture is removed. If oysters are very large, you can halve them so each piece is bite-size. Place oysters in a bowl and season lightly with 1 tsp salt and 1/2 tsp black pepper. Set aside on a plate.

Make breading components

Set up three shallow dishes: 1) Combine all-purpose flour and cornstarch in the first dish and season with a pinch of salt. 2) In the second dish whisk together the eggs, 2 tablespoons cold water, 1/4 tsp salt and 1/8 tsp black pepper until smooth (egg wash). 3) Put panko breadcrumbs in the third dish (if desired, pulse panko once in food processor for slightly finer texture).

Bread the oysters

One at a time: dredge each oyster in the flour/cornstarch mixture, shaking off excess. Dip into the egg wash, then press into the panko breadcrumbs until evenly coated. Place breaded oysters on a wire rack or plate; let rest 5–10 minutes to help the coating adhere. Repeat until all oysters are breaded (you should end up with 12 breaded pieces — about 3 pieces per serving to make 4 servings of 3 each, or arrange as 4pc portions as desired).

Heat oil

Pour 2 cups neutral oil into a deep skillet or medium saucepan to a depth of ~1 to 1.5 inches (enough to partially deep-fry). Heat over medium-high until oil reaches 170–175°C (340–350°F). If you don't have a thermometer, test by dropping a small breadcrumb — it should sizzle and brown in about 40–60 seconds.

Fry oysters

Fry breaded oysters in batches (do not overcrowd) for 2.5–3 minutes per side or until golden brown and crisp. Turn gently with tongs or a slotted spoon. Maintain oil temperature between 165–175°C; reduce heat slightly if browning too quickly. Use a slotted spoon to transfer fried oysters to a wire rack set over a baking tray or paper towels to drain. For very large oysters, cook until internal temperature is at least 63°C (145°F) if desired.

Allow oysters to rest 1–2 minutes so the crust firms up and the interior finishes cooking.

Sauce & plating

Prepare sauces and garnish

Combine tonkatsu sauce (1/2 cup) and Japanese mayo (1/4 cup) in small bowls for dipping or drizzle. Optionally mix a little mayo into the tonkatsu for a creamy drizzle. Arrange shredded cabbage on plates as a bed for the katsu and sprinkle with thinly sliced chives/scallions and optional pickled ginger.

Assemble and serve

Place 3 breaded fried oysters per serving (for 4 servings total) on the cabbage bed or on a small platter. Drizzle or serve tonkatsu sauce and mayo on the side. Garnish with a lemon wedge on each plate. Serve immediately while hot and crispy.
