Cut chicken

Trim excess fat from the chicken thighs and cut into 1.5–2 inch pieces (bite-size). Pat lightly dry with paper towels.

Make marinade

In a bowl large enough to hold the chicken, combine 3 tbs soy sauce, 2 tbs sake, 1 tbs mirin, 1 tbs grated ginger, 1 tsp grated garlic, 1 tsp sugar, 1 tsp salt, and 1/2 tsp coarsely ground black pepper. Stir until sugar and salt dissolve.

Marinate chicken

Add the cut chicken pieces to the marinade and toss to coat evenly. Cover and refrigerate for 30–60 minutes (up to 2 hours). Remove from fridge 15 minutes before frying to take the chill off.

Add egg

Just before coating, add 1 lightly beaten egg to the marinated chicken and toss to combine. This helps the starch adhere and yields a slightly crisper, craggy crust.

Prepare coating mix

In a shallow bowl, whisk together 3/4 cup potato starch, 1/4 cup all-purpose flour, 1/4 tsp baking powder, and 1/4 tsp salt until evenly combined.

Coat chicken

Working in small batches, dredge marinated chicken pieces in the starch-flour mixture, pressing lightly so the coating adheres and forms an uneven, craggy surface (this creates the signature karaage texture). Shake off excess.

Frying

Heat oil

Pour neutral oil into a deep, heavy-bottomed pot or Dutch oven to a depth of about 2–3 inches (roughly 3–4 cups, depending on pot). Heat oil over medium-high until it reaches 325°F (160°C) for the first fry. If you don't have a thermometer, heat until a small piece of coating sizzles gently and rises slowly.

First fry (blanch)

Fry the chicken in small batches (do not overcrowd) at 325°F (160°C) for 3–4 minutes until the exterior is set and the pieces are pale golden. Use a slotted spoon to transfer pieces to a wire rack or paper towel-lined tray to drain and rest for 5 minutes. This step cooks through without over-browning.

Raise heat

Increase the oil temperature to 375°F (190°C). Let oil stabilize at this temperature between batches.

Second fry (crisp)

Return rested chicken to the hot oil and fry in batches for 1–2 minutes until deep golden brown and very crisp. Drain on a wire rack or paper towels for a minute, then transfer to serving plate lined with shredded cabbage or lettuce if using.

Season immediately

While still hot, sprinkle a light pinch of salt over the fried chicken pieces to enhance flavor. Squeeze a little lemon juice over them just before serving, if desired.

Make tare

To make the optional dipping sauce, whisk together 2 tbs soy sauce, 1 tbs rice vinegar, 1 tsp mirin, 1/2 tsp sugar, 1/2 tsp sesame oil, and 1 tbs chopped scallion until sugar dissolves. Taste and adjust balance (add a bit more vinegar for brightness or a touch more sugar if too sharp).

Serve

Arrange the hot Hokkaido Zangi Karaage on a platter over shredded cabbage or lettuce. Serve immediately with lemon wedges and kewpie mayo or plain mayo on the side, plus the optional tare for dipping.
