Bring items together

Remove bagel from packaging. If using refrigerated bacon, separate slices. Crack the egg into a small bowl and season lightly with a pinch of salt and pepper so it's ready to cook. Place cheese slice near the stove.

Cook bacon

Pan-fry bacon

Heat a 10-inch skillet over medium heat. Add the bacon slices in a single layer. Cook 3–4 minutes per side for thick-cut bacon, or until edges are browned and internal texture is cooked through but still slightly flexible. Adjust time for thickness. Remove bacon to a plate lined with paper towel to drain. Reserve about 1 teaspoon bacon fat in the pan; if there's none, add 1 teaspoon neutral oil.

Toast bagel

Split and toast

While bacon rests, split the bagel and toast in a toaster or under a broiler until golden and crisp to your preference (approximately 1–3 minutes). Spread 1 teaspoon of butter on the cut, hot bagel halves so it melts into the surface.

Cook egg

Fry the egg

Return the skillet to medium-low heat if it cooled. Add about 1 teaspoon butter or reserved bacon fat and let it melt. Pour the beaten or whole cracked egg into the pan. For a fried-over-easy style: cook 2–3 minutes until whites are nearly set, then gently flip and cook 20–30 seconds for a runny yolk or 1 minute for a medium yolk. For a fried-through (fully set) yolk, cook about 2 minutes after flipping. Season with a pinch of salt and pepper while cooking.

Melt cheese

A few seconds before the egg is done, place the cheddar slice on top of the egg and cover the skillet with a lid for 15–30 seconds to melt the cheese. If you prefer the egg under the cheese, place the cheese on a bagel half instead.

Assemble & finish

Place the cheese-topped egg on the bottom bagel half. Lay the two cooked bacon slices on top of the egg. Drizzle hot sauce (about 1 teaspoon) over the bacon, if using. Top with the toasted bagel half. Press gently, slice in half if desired, and serve immediately.
