Prepare tomatoes
Core and seed the tomatoes (optional for less moisture): cut each tomato in half crosswise, scoop out seeds with a spoon, then dice the flesh into approximately 1/4-inch pieces until you have about 3 cups. Place diced tomatoes into a medium mixing bowl.
Mince garlic
Finely mince 2 of the garlic cloves. Reserve the remaining clove whole for rubbing on the toasted bread later.
Combine and season
To the bowl with tomatoes add the minced garlic, sliced basil leaves, 3 tablespoons extra-virgin olive oil, 1 teaspoon red wine vinegar, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Stir gently to combine. Taste and adjust salt, pepper or vinegar as needed. Let the mixture sit at room temperature for 10–15 minutes to allow flavors to marry and for some liquid to release.

Prep and toast bread
Preheat a grill pan or oven broiler to medium-high (or heat a skillet). Brush both sides of each bread slice lightly with the 2 tablespoons extra-virgin olive oil. Place slices on the grill pan, skillet, or on a baking sheet under the broiler. Toast until golden and crisp, about 1–2 minutes per side on a hot skillet or 1–3 minutes per side under the broiler—watch closely to avoid burning.
Rub with garlic
As soon as the toasts come off the heat, rub the top side of each slice with the reserved whole garlic clove (cut side down) to impart a subtle garlic aroma. If you prefer stronger garlic, lightly brush the minced garlic onto the toast before topping (ensure even distribution).
Assemble bruschetta
Spoon generous portions of the tomato topping onto each toasted bread slice, dividing the mixture evenly across the 4 pieces. Use a slotted spoon if you want to avoid transferring excess liquid; otherwise include some of the flavorful juices.
Finish and serve
If desired, sprinkle a tiny pinch of additional salt and freshly cracked black pepper over each bruschetta and drizzle with a light thread of balsamic glaze (about 1/2 tablespoon per 4 pieces) or an additional 1/2 teaspoon of extra-virgin olive oil. Serve immediately so the bread remains crisp.
