Prepare tomatoes

Core and dice the tomatoes into approximately 1/4-inch pieces. Place the diced tomatoes in a mixing bowl. If tomatoes are very juicy, gently drain off excess liquid so topping is not soggy; reserve juices for soups or discard.

Combine aromatics

Add the finely diced red onion, minced garlic, and sliced basil to the bowl with the tomatoes.

Dress the topping

Add 2 tablespoons extra virgin olive oil and 1 tablespoon red wine vinegar to the tomato mixture. Season with 1 teaspoon salt and 1/2 teaspoon freshly ground black pepper. Stir gently to combine, tasting and adjusting salt or vinegar as needed. Let the mixture rest at room temperature for 10–15 minutes to allow flavors to meld.

Bread and assembly

Prepare and toast bread

Preheat oven to 425°F (220°C) or heat a grill pan to medium-high. Brush both sides of the bread slices lightly with the 2 tablespoons olive oil. Arrange slices on a baking sheet in a single layer (or place on the grill pan) and toast for 5–7 minutes in the oven, flipping once halfway, until edges are golden and surface is crisp. If using a grill pan, toast 1–2 minutes per side until char marks appear and bread is crisp.

Garlic rub

Remove toasted bread from oven or grill. While still warm, rub the cut side of the halved garlic clove over the top of each slice to impart a subtle garlic flavor.

Top the bread

Spoon a generous portion of the tomato topping on each toasted slice, allowing excess liquid to drip back into the bowl (avoid over-saturating the bread). Arrange 1/4‑cup of topping per slice on average; adjust depending on slice size.

Finish with cheese and salt

Lightly sprinkle each bruschetta with grated Parmesan or Pecorino (about 1 tablespoon per slice). If desired, finish with a light pinch of flaky sea salt and an optional drizzle of a little extra virgin olive oil.

Serve

Serve immediately so bread remains crisp. Leftover topping can be chilled for up to 24 hours; bring to room temperature and drain any excess liquid before using.
