Brown Sugar Boba
Boil the pearls
Bring 4 cups water to a rolling boil in a medium saucepan. Add 1/2 cup uncooked tapioca pearls and stir immediately to prevent sticking. When pearls float, reduce heat to maintain a gentle boil and cook uncovered for 20–25 minutes (follow package time if different) until they reach a soft, chewy center with no hard white core.
Rest the pearls
Turn off the heat, cover the saucepan, and let the pearls sit for 10 minutes to finish cooking and firm up slightly.
Prepare brown sugar syrup
While pearls are cooking or resting, combine 1/2 cup dark brown sugar, 1/4 cup light brown sugar, 1/4 cup water, and a pinch (1/4 tsp) of salt in a small saucepan. Bring to a simmer over medium heat, stirring until the sugars dissolve. Reduce heat and simmer gently for 3–5 minutes until slightly thickened and glossy. Remove from heat.
Rinse and sweeten pearls
After resting, drain the pearls in a fine mesh strainer and briefly rinse under warm water to remove excess starch. Transfer the drained pearls into the warm brown sugar syrup and stir to coat. Let them sit in the syrup for at least 5–10 minutes so they absorb flavor; for best results, keep them in the syrup while assembling the drink so they remain warm and sweet.
Milk Tea
Divide the brown sugar–coated boba between two serving glasses (about 1/4 cup boba per glass depending on how many pearls you retained). Spoon a little extra syrup from the boba into each glass (about 1 tablespoon) to create the brown sugar streaks on the glass sides if desired.
Add about 1/2 cup ice to each glass (adjust to preference). Pour 5/8 cup (about 5 fl oz) whole milk into each glass for a total of 1.25 cups split between two servings. If you prefer sweeter or creamier, stir in 1/8–1/4 teaspoon vanilla extract to the milk before pouring and/or add up to 1 tablespoon additional brown sugar syrup per glass to taste.
Stir gently to combine so that brown sugar streaks swirl into the milk but pearls remain at the bottom. Serve with wide boba straws and enjoy immediately while the pearls are warm and chewy.
