Cook bacon
Place a cold, large skillet or cast-iron pan over medium heat. Lay the 4 bacon slices in a single layer without overlapping. Cook, turning occasionally, until edges are crisp and the bacon is browned but still slightly pliable, about 7–10 minutes depending on thickness. For extra-crispy, cook 10–12 minutes. Transfer bacon to a plate lined with paper towels to drain. Reserve 1 tsp bacon fat in the pan (optional) or wipe pan clean and add butter for eggs as directed.
Bagel & Spread
Toast bagels
Split the 2 everything bagels and toast cut sides in a toaster or under a broiler until golden and edges are crisp, about 2–4 minutes depending on equipment.
Spread
While still warm, spread 1 tablespoon of cream cheese (or butter) on each cut side of the bagel halves (4 halves total), dividing 4 tablespoons evenly.

Beat eggs
Crack 2 large eggs into a bowl. Add 1 tablespoon milk or water, 1/4 tsp black pepper, and 1 tsp salt. Whisk until blended and slightly frothy. (If making sandwiches for two, increase eggs quantities accordingly.)
Cook eggs
Heat a nonstick skillet over medium-low. Add 1 tablespoon unsalted butter (or reserved bacon fat). Once butter melts and starts to foam, pour the beaten eggs into the pan. Let sit for 10–20 seconds, then gently stir with a spatula, scraping the bottom as the eggs set, to create soft-scrambled curds. Cook until eggs are mostly set but still slightly glossy, about 1–2 minutes. For a fried/over-easy style instead: heat skillet over medium, add butter, crack eggs and cook until whites set and yolks reach desired doneness, 2–3 minutes; flip for over-easy and cook 15–30 seconds more.
Melt cheese
Divide the cooked eggs evenly across the bottom halves of the bagels (or place whole cooked eggs on bagel bottoms if using fried). Top each portion of egg with 1 slice of cheddar (or preferred cheese). Cover the pan briefly with a lid or place the bagel bottoms in the warm skillet and cover to melt the cheese for 30–60 seconds, or microwave slices for 10 seconds if needed.
Assemble sandwich
Place 2 slices of cooked bacon on top of the cheese-covered eggs on each bagel bottom. Cap with the toasted bagel top (cream-cheese side up or down as you like). Press gently to compact.
Serve
Cut each sandwich in half if desired and serve immediately while warm. Optional: add hot sauce, sliced tomato, or greens.
