Omelette base
Mix eggs
Crack the 4 eggs into a bowl. Add 3 tbs water or light seafood stock, 1–2 tbs of reserved oyster liquor (optional), 2 tbs chopped cilantro, sliced scallions, 3 tsp kosher salt, and 1 tsp white pepper. Whisk until well combined and slightly frothy. Taste and adjust seasoning — mixture should be lightly salted to complement oysters.

Make starch slurry
In a separate bowl, whisk together 4 tbs sweet potato starch and 2 tbs all-purpose flour. Gradually add 6 tbs cold water, whisking to a smooth, lump-free slurry. Stir in 1 tsp light soy sauce and 1 tsp sesame oil. The slurry should be pourable but viscous; add a teaspoon more water if too thick.
Cooking
Heat pan
Place a 10–12 inch nonstick or well-seasoned cast-iron skillet over medium-high heat. Add 2–3 tbs neutral oil and heat until shimmering but not smoking (about 30–60 seconds). Swirl to coat the surface.
Cook oysters briefly
Add the drained baby oysters to the hot oil in a single layer. Stir for 20–30 seconds just until edges begin to curl and they release some aroma. Do not overcook — oysters will finish cooking in the omelette.
Crisp edges
After the bottom is set, increase heat to medium-high for 30–45 seconds to encourage lacy, crisp edges—you should hear gentle sizzling. Use a spatula to lift edges and check for golden-brown crisping. If the omelette sticks, add a thin film of oil around edges and under the omelette.
Finish cooking
Once the bottom is well-browned and top is mostly set but still slightly glossy, fold the omelette in half or leave open. Cook another 20–30 seconds for doneness. The interior should be set but moist; oysters should be cooked through (opaque at edges).
Rest and plate
Slide the omelette onto a serving plate. Sprinkle remaining chopped cilantro and extra sliced scallions on top. Optionally drizzle 1/4 tsp sesame oil for aroma.
Sauce
Make quick sauce
While the omelette cooks or immediately after, whisk together 1 tsp chili paste, 1 tsp rice vinegar, 1 tsp light soy sauce, 1 tsp sugar, and 2 tbs water until sugar dissolves. Taste and adjust heat or sweetness. Warm gently in the microwave for 10 seconds or in a small saucepan until just warm (do not boil).
Serve
Serve the omelette hot with the sauce on the side or lightly spooned over the top. Offer extra lime wedges or sliced fresh chilies for those who want more acidity or heat.
