Brewing Process
1. Mashing
In a large pot, heat 3 gallons of water to around 165°F (74°C). Add Pilsner malt, Carapils malt, and rice to the pot. Stir well and maintain the temperature at 150°F (65°C) for 60 minutes.
2. Sparging
After mashing, sparge the grains with an additional 2 gallons of water heated to 170°F (77°C) to extract sugars. Collect the wort in a separate pot.
3. Boiling
Bring the collected wort to a boil. Add the hops and boil for 60 minutes. This will add bitterness and flavor to the beer.
4. Cooling
After boiling, cool the wort quickly using a wort chiller or an ice bath to around 70°F (21°C).
5. Fermentation
Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal with an airlock. Allow it to ferment at around 50-55°F (10-13°C) for 2-3 weeks.
6. Bottling
After fermentation is complete, prepare a priming sugar solution, and add it to the beer. Bottle the beer in sanitized bottles and cap them.
7. Conditioning
Allow the bottles to condition at room temperature for about 2 weeks before refrigerating them.
