Strawberry-Infused Aperol

Prepare strawberries
Place the hulled and quartered strawberries in a small bowl. Add the granulated sugar and lemon juice. Muddle gently with a muddler or back of a spoon until the berries release juice and the sugar begins to dissolve (about 1–2 minutes).

Infuse
Let the mixture infuse in the refrigerator for at least 4 hours, preferably overnight (8–12 hours) for a more pronounced strawberry flavor. If short on time, let sit at room temperature for 1 hour, then refrigerate.

Strain
After infusing, strain the Aperol through a fine-mesh sieve or cheesecloth into a clean container, pressing on solids to extract as much flavored liquid as possible. Discard solids. Chill the infused Aperol until ready to assemble cocktails.

Prepare glassware
Fill each large wine glass or stemmed balloon glass with a few ice cubes (about 3–4 cubes per glass). If you prefer a slightly less chilled drink, use fewer ice cubes.

Build the Spritz
Measure 3 oz (about 90 ml) of the chilled strawberry-infused Aperol into each prepared glass. Add 3 oz (about 90 ml) of chilled Prosecco on top (roughly equal parts Aperol and Prosecco). For a lighter spritz, top each glass with 1 oz (30–40 ml) chilled club soda. Stir gently once with a bar spoon to combine.

Cinnamon zest
Hold the cinnamon stick over the glass and, using a microplane or the edge of a grater, gently grate a light dusting of cinnamon across the surface of the drink (about a small pinch). Alternatively, if using ground cinnamon, shake a very light dusting (less than 1/8 tsp) over each glass to avoid overpowering the flavors.
