Cocktail Preparation

    Combine ingredients

    In a cocktail shaker, add Luxardo Del Santo, white rum, pineapple juice, fresh lime juice, orgeat, simple syrup, and 2 dashes of Angostura bitters.

    Add ice and shake

    Fill the shaker with ice (preferably cubed). Shake vigorously for 10–15 seconds until well chilled and slightly diluted.

    Prepare glass

    Fill a double old-fashioned glass or a tall Collins-style glass with crushed ice, packing it so the glass is nearly full.

    Strain and swizzle

    Fine-strain the shaken mixture over the crushed ice. Use a swizzle stick or a long bar spoon to stir vigorously between your palms (or spin the spoon between your hands) for 15–30 seconds, pressing the ice down and creating a frosty, layered appearance (the 'swizzle' technique).

    Top and finish

    Add a final layer of crushed ice on top if needed. Dash 1–2 additional drops of Angostura bitters on the ice surface and use a toothpick to gently trail the bitters for a decorative pattern. Optionally slap the mint sprig between your palms and tuck it beside the garnish.

Garnish & Serve

    Place one dehydrated pineapple wheel on the rim or float it on top of the crushed ice. Add the optional mint sprig behind the pineapple for aroma. Serve with a straw and a small swizzle stick.
