Method

Prepare aromatics
Peel and mince garlic, grate galangal or ginger, trim and finely chop the white part of the lemongrass (or measure paste). Have lime juice measured and fish sauce ready.
Bloom curry paste
In a medium pot over medium heat, add 1 tablespoon neutral oil. When shimmering, add the 2 tablespoons red curry paste and the 1 teaspoon chili paste. Sauté, stirring constantly, for 30–45 seconds until very fragrant and the paste loosens from the pan.
Build broth
Add minced garlic, grated galangal (or ginger), and chopped lemongrass to the pot and sauté 30 seconds. Pour in 2 cups coconut milk and 2 cups broth, stirring to combine. Bring mixture to a gentle simmer (do not boil vigorously) over medium-low heat for 6–8 minutes to allow flavors to meld.
Season broth
Stir in 2 tablespoons fish sauce, 1 tablespoon brown sugar, and 2 tablespoons lime juice. Taste and adjust: add more fish sauce for saltiness, more sugar for sweetness, or an extra 1 teaspoon chili paste for heat. Keep the broth at a low simmer while preparing other components.

Prepare rice noodles
Place rice noodles in a large heatproof bowl. Pour boiling water over them to cover and let soak according to package instructions (usually 5–8 minutes) until pliable but slightly al dente. Drain thoroughly and toss lightly with a little neutral oil to prevent sticking.
Finish noodles
If you prefer, briefly dip drained noodles in the simmering curry broth for 15–30 seconds to heat through and allow them to absorb flavor before assembling bowls.

Crisp or warm garnishes
If using store-bought fried shallots, have them ready. To make quick homemade fried shallots: thinly slice 1–2 shallots and fry in about 1/3 cup oil over medium heat until golden brown and crisp (2–4 minutes), then drain on paper towels — cool before using. Toast peanuts in a dry skillet for 1–2 minutes if using.
Assemble fresh veg
Place julienned bok choy and sliced scallions in a small bowl and toss lightly so they are ready to top each bowl.
Finishing & Assembly
Warm bowls by filling with hot water for a minute, then discard water. Divide the drained rice noodles between 4 bowls (about 2 oz noodles per serving if serving 4).
Ladle hot coconut curry broth over the noodles, covering them completely. Add 4 grilled shrimp to each bowl (or distribute shrimp evenly).
Top each bowl with a generous handful of julienned bok choy, a sprinkle of sliced scallions, 1/2 tablespoon fried shallots, a few cilantro leaves, basil if using, and 1/2 tablespoon crushed peanuts if desired.
Drizzle each bowl with about 1/8–1/4 teaspoon sesame oil if desired. Serve immediately with lime wedges on the side for squeezing over the soup.
Taste and adjust at the table: add extra fish sauce, lime juice, or chili paste for individual preference.
