Caramelized Onions
Cook onions
Heat a nonstick or stainless skillet over medium-low. Add oil and butter; when butter melts, add the thinly sliced onion, sugar, and salt. Stir to combine so onions are coated. Cook, stirring every 2–3 minutes, lowering heat if they begin to brown too quickly. Total cooking time ~18–22 minutes until deeply golden and soft. When done, remove from pan to a small bowl and set aside.
Special Sauce
In a small bowl combine mayonnaise, ketchup, yellow mustard, sweet pickle relish, apple cider vinegar, onion powder, garlic powder, and optional hot sauce. Whisk until smooth. Taste and adjust for salt or acidity. Refrigerate until assembly — sauce can be made up to 2 days ahead.
Burger Patties & Assembly
Smash and season
Place one beef ball on the hot surface. Using a sturdy spatula or a second flat spatula with a piece of parchment or wax paper between meat and press, smash the ball firmly to a thin patty (~1/4 inch thick). Season immediately with a pinch of kosher salt and ground black pepper. Repeat with the second ball in a separate area of the pan. Leave space between patties.
Cook patties
Cook the patties without moving for 2–2.5 minutes until the edges are deeply browned and crisp. Flip each patty and immediately top each with a slice of cheddar cheese. Cook an additional 45–90 seconds until cheese is melted and patty is cooked through (target medium-well thin smash). Remove patties to a plate and keep warm.
Assemble Nova Burger
Spread about 1 tablespoon of special sauce on the bottom bun. Place one cheesy smash patty on the sauce, then add half of the caramelized onions (about 1–2 tablespoons). Add the second cheesy patty on top. Top with leaf lettuce and 3 pickle slices. Spread a thin layer of special sauce on the top bun and close the burger. Serve immediately.
