Prepare Onions

    Peel the onions and cut off root and stem ends. Slice into 1/2-inch thick rings. Separate the rings gently with your fingers. If many rings stick together, slide a small paring knife between layers to separate without breaking.

    Place the separated rings in a bowl of cold water for 10 minutes to help remove some sharpness and tighten the rings for better frying. Drain and pat completely dry with kitchen towels or paper towels before dredging.

    In a medium bowl whisk together 1.5 cups all-purpose flour, 1/4 cup cornstarch, 1 tsp baking powder, 1 tsp kosher salt, 1/2 tsp black pepper, and 1/2 tsp smoked paprika until evenly combined.

    In a separate bowl lightly beat 1 large egg, then whisk in 1 cup milk and 1/2 cup cold sparkling water (use sparkling water for a lighter, crispier batter; omit or replace with more milk if unavailable).

    Make a well in the dry ingredients and pour in the wet mixture. Whisk until just combined — a few small lumps are fine; avoid overmixing. Batter should be thick but pourable; if too thick, add up to 2 tablespoons milk or water.

    Place the extra 1/2 cup flour in a shallow bowl for dredging and the 1 cup panko breadcrumbs in another shallow plate. Keep batter accessible in a bowl wide enough to dip rings.

Frying

    Pour about 3–4 inches of vegetable oil into a heavy-bottomed pot or deep fryer (roughly 4–6 cups depending on vessel). Heat the oil to 360°F (182°C). If you don't have a thermometer, test with one small piece of bread or a drop of batter: it should sizzle and brown in about 45–60 seconds.

    Working in small batches to avoid overcrowding, dredge each dry onion ring in the 1/2 cup flour, shaking off excess. Dip the floured ring into the batter, letting excess drip back into the bowl, then press into the panko to coat evenly. Place coated rings on a tray or wire rack while you prepare the next batch.

    Carefully lower 4–6 rings (depending on pot size) into the hot oil using tongs or a spider. Fry, turning occasionally, until golden brown and crisp, about 2 to 3 minutes per batch. Maintain oil temperature around 350–365°F (175–185°C) for even cooking. If oil cools down, wait for it to return to temperature before adding more rings.

    Use a slotted spoon or spider to remove rings to a paper towel-lined baking sheet or wire rack set over a sheet pan to drain. Immediately sprinkle with the 1 tsp fine salt while still hot so the salt adheres. Repeat frying remaining rings in batches.

    If serving all at once, preheat your oven to 200°F (95°C) and place finished rings on a rack in the oven to keep warm and crisp while you finish remaining batches.
