Mix sauce
In a small bowl, combine mayonnaise, ketchup, sweet pickle relish, yellow mustard, white wine vinegar, onion powder, garlic powder, and paprika. Whisk until smooth. Taste and adjust seasoning. Cover and refrigerate while you prepare the burgers. Yields about 3/4 cup; use 4 tablespoons for the two burgers.

Form patties
Divide the 1 lb ground beef into four equal portions (about 4 oz each). Lightly form into thin patties about 4 inches across and about 1/2 inch thick, pressing a slight dimple in the center of each to help them cook flat. Do not overwork the meat; handle gently.

Season
Season both sides of each patty with kosher salt and freshly ground black pepper just before cooking.

Cook patties
Place two patties on the hot griddle (work in batches if needed). Cook for 2-3 minutes without moving, until a brown crust forms. Flip, then immediately place one slice of American cheese on each patty. Cook for another 1.5-2 minutes until cheese is melted and patties reach desired doneness (internal ~160°F for well-done) and edges are crisp.

Slice onion
Thinly slice the half onion into rings. Separate rings and, if desired, very finely chop a couple slices to mix into the sauce or sprinkle on the burger.

Assemble burgers
Build two 'Double Double' burgers: On the bottom bun, spread 2 tablespoons of special sauce, add a small handful of shredded iceberg lettuce, 2 pickle slices, one tomato slice (optional), then place one cheese-topped patty. Add the second patty on top of the first. Top with a few raw onion rings, more sauce on the top bun (about 2 tablespoons), then close the burger. Repeat for the second burger.

Serve burgers immediately while hot with your choice of fries or chips. Leftover special sauce keeps refrigerated in an airtight container for up to 5 days.
