In a large mash tun, heat 3 gallons of filtered water to 165°F (74°C). Add the Pilsner and Carapils malts, stirring gently to combine.

Prepare the Mash

Maintain the mash temperature at 152°F (67°C) for 60 minutes. Stir occasionally to ensure even heat distribution.

Hold the Temperature

After the mash is complete, drain the wort from the mash tun into a brew kettle. Sparge the grains with an additional 2 gallons of hot water at 170°F (77°C) to extract more sugars.

Drain the Wort

Bring the wort to a boil and add the Hallertau hops. Boil for 60 minutes, adding the Saaz hops in the last 10 minutes of the boil.

After the boil, quickly cool the wort to around 70°F (21°C) using a wort chiller or an ice bath.

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the American Lager Yeast according to the package instructions.

Seal the fermentation vessel and allow the beer to ferment at 50-55°F (10-13°C) for 2 weeks.

Ferment

After fermentation, sanitize your bottles and caps. Prepare a priming sugar solution if bottling with carbonation.

Prepare for Bottling

Transfer the beer into the bottles, leaving about an inch of headspace. Cap the bottles securely.

Bottle the Beer

Allow the beer to condition for at least 2 weeks at room temperature before chilling and consuming.
