Hefeweizen brewed with Mosaic hops! A harmonious melding of traditional Hefe characteristics – banana / clove notes, with a complimentary dose of tangerine, lime, and berries from the hops, with a med. body and smooth finish! Designed by Becky Norton.

Heat 5 gallons of water to 160°F (71°C). Add the Pilsner Malt, Wheat Malt, and Carapils Malt to the water.

Prepare the Mash

Maintain the mash at 152°F (67°C) for 60 minutes. Stir occasionally to ensure even temperature distribution.

Mashing Process

After mashing, sparge with an additional hot water to collect the wort, aiming for a total volume of about 6.5 gallons.

Sparging

Bring the wort to a boil, then add the Mosaic Hops. Boil for 60 minutes.

After the boil, cool the wort quickly using a wort chiller or an ice bath.

Cooling the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the Hefeweizen Yeast.

Pitch the Yeast

Seal the fermenter and allow it to ferment at 65-70°F (18-21°C) for about 1-2 weeks.

Fermentation Period

After fermentation is complete, prepare a priming solution with 3 oz of priming sugar and 2 cups of water, boiling for 5 minutes.

Bottling Preparation

Add the priming solution to the beer, then bottle using sanitized bottles and caps.

Bottling the Beer

Allow the bottles to carbonate at room temperature for 1-2 weeks before refrigerating.
