Imperial West Coast IPA. 110 IBU's worth of Citra and Amarillo kettle hop additions, then dry hopped with more Citra! Bursting with aggression and bright pine and citrus!

In a large mash tun, heat 6 gallons of filtered water to 165°F (74°C). Add the Pale Malt, Caramel Malt, and Carapils, stirring well to avoid clumps. Maintain the mash temperature at 152°F (67°C) for 60 minutes.

Mashing the Grains

After mashing, sparge the grains by rinsing them with hot water (around 170°F/77°C) until you collect around 6.5 gallons of wort in the brew kettle.

Sparging

Bring the wort to a rolling boil. Once boiling, add 2 oz of Citra hops and 1 oz of Amarillo hops. Boil for 60 minutes.

Boil the Wort

With 5 minutes left in the boil, add any remaining hops to enhance the aroma.

Finish the Boil

After the boil, cool the wort rapidly using a wort chiller or an ice bath to reach around 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the American Ale yeast and seal with an airlock. Allow fermentation to occur at a stable temperature of around 68°F (20°C) for 1-2 weeks.

Ferment

Once fermentation is complete, add 3 oz of Citra hops directly to the fermentation vessel for dry hopping. Allow it to rest for an additional 5-7 days.

Dry Hopping

After dry hopping, siphon the beer into sanitized bottles, ensuring proper carbonation levels. Cap and store them in a cool, dark place for 1-2 weeks.
