A festive favorite, our Oktoberfest Lager is just the right level of smooth to usher in Fall! Double decoction mash aides in a bread, malty drinking experience and gentle amber hues! Prost!!

Heat 3 gallons of filtered water to approximately 165°F (74°C).

Heat Water

Add the crushed Pilsner, Munich, Caramel, and Chocolate malts to the water, stirring well to avoid clumping.

Add Malts

Maintain the mash temperature at 152°F (67°C) for 60 minutes. This is the first step of your double decoction mash.

Mash In

After 60 minutes, remove one-third of the mash and bring it to a boil in a separate pot for 15-20 minutes.

Decoction

Return the boiled mash back to the main mash to raise the temperature to 168°F (76°C) and hold for another 10 minutes.

Raise Temperature

Sparge with an additional 3 gallons of water at 170°F (77°C) to collect about 6 gallons of wort.

Sparging

Bring the collected wort to a rolling boil.

Boil Wort

Add the Noble hops and boil for 60 minutes, stirring occasionally.

In the last 15 minutes of the boil, add the Saaz hops.

Flavoring Hops

Cool the wort quickly using a wort chiller or an ice bath until it reaches approximately 50°F (10°C).

Transfer the cooled wort to a sanitized fermenter and pitch the lager yeast.

Pitch Yeast

Seal the fermenter with an airlock and allow fermentation to occur at 50°F (10°C) for 2 weeks.

Fermentation Period

After fermentation is complete, prime the beer with priming sugar (about 3/4 cup) to carbonate.

Prime Beer

Bottle the beer in sanitized bottles and cap them tightly.

Bottling

Let the beer carbonate at room temperature for 1-2 weeks before refrigerating.
