Preparing Bonito Jus

Make Bonito Jus

In a saucepan, combine bonito flakes and water. Bring to a boil, then reduce heat and simmer for 15 minutes. Strain and add soy sauce and mirin. Set aside.

Making Sauce Pipian

Prepare Sauce Pipian

In a blender, combine pumpkin seeds, garlic, green chili, cilantro, lime juice, and water. Blend until smooth. Set aside.

Cooking Green Bean Salad

Prepare Green Bean Salad

Blanch yellow wax beans and Nichols Farms green beans in boiling water for 3-4 minutes until tender. Drain and cool in ice water. Toss with olive oil, red onion, cherry tomatoes, salt, and pepper.

Cooking Scallops

Pan Seer Scallops

Season scallops with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Add scallops and sear for 2-3 minutes on each side until golden brown.

Plating

Serve

On a plate, arrange the green bean salad, place seared scallops on top, drizzle with bonito jus and sauce pipian. Garnish with additional pepitas if desired.
