Sponge Cake

Prepare the Batter

In another bowl, sift together flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture until just combined. Pour into a greased cake pan and bake for 25-30 minutes.

Cool and Slice

Once baked, let the cake cool completely before slicing it into layers.

Hazelnut Praliné

Make the Praliné

In a saucepan, combine sugar and water. Cook on medium heat until the sugar dissolves. Add hazelnuts and cook until golden brown. Pour onto a baking sheet to cool, then chop finely.

Cardamom Gel

Prepare the Gel

In a saucepan, combine water and cardamom pods. Bring to a boil, then let simmer for 10 minutes. Strain out the pods. Mix agar-agar and sugar into the water and bring to a boil again. Pour into a mold and refrigerate until set.

Compressed Apples

Compress the Apples

Peel and core the apples, then cut them into small cubes. Toss with lemon juice and sugar. Place in a vacuum bag and compress for 10 minutes.

Whipped Mascarpone

Whip the Mascarpone

In a bowl, mix mascarpone, heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.

Rolled Hazelnut Ice Cream

Make the Ice Cream

In a saucepan, heat milk and sugar until dissolved. In a bowl, whisk egg yolks. Slowly pour the warm milk mixture into the yolks, then return to the saucepan and cook until thickened. Stir in hazelnut paste and heavy cream. Chill and churn in an ice cream maker.
