Sandwich
Method
Sandwich
Toast bread (optional)
Lightly butter one side of each slice of bread if desired. Heat a skillet over medium heat or preheat a toaster. Toast the bread until golden and slightly crisp, about 1–2 minutes per side in a skillet or 2–3 minutes in a toaster. Remove and set aside, buttered side down if pan-toasting.
Prepare tomato
Wash the tomato and slice into 1/4-inch (6 mm) thick slices. Lay slices on a plate and sprinkle evenly with about 1/4 teaspoon of kosher salt and a few grinds of black pepper to bring out the flavor.
Assemble mayo layer
Spread about 1 tablespoon of mayonnaise evenly over one side of four bread slices (or the non-toasted side, if you prefer). This creates a moisture barrier and flavor base.
Layer lettuce and tomato
Place one lettuce leaf on each mayo-spread slice of bread. On top of the lettuce, arrange 2–3 tomato slices per sandwich (depending on tomato size) in a single layer. Sprinkle the exposed tomato lightly with the remaining salt and pepper (about 1/4 teaspoon salt + remaining pepper).
Add bacon
Top the tomato with two cooked bacon strips per sandwich (four slices of bread makes two sandwiches). Arrange bacon so it covers the tomato evenly; you can overlap slices slightly.
Finish and serve
Spread about 1 tablespoon mayonnaise on the remaining four bread slices and place them mayo-side down on top of the bacon to close the sandwiches. Press gently, then slice each sandwich diagonally in half if desired. Serve immediately.
