Prep cauliflower

Trim the cauliflower into bite-size florets, rinse, and pat dry thoroughly with a towel to remove surface moisture. This helps achieve good browning.

Season the florets in a large bowl with 1/2 tsp kosher salt and 1/4 tsp black pepper. Toss to coat evenly.

Heat a large heavy skillet or cast-iron pan over medium-high heat until hot. Add 2 tbsp neutral oil and swirl to coat.

Add the cauliflower in an even layer (work in two batches if needed). Let cook undisturbed for 3–4 minutes until the undersides are well browned, then stir or flip and cook an additional 3–4 minutes until tender-crisp and browned in spots. Total cook time 6–8 minutes depending on batch size.

Transfer the browned cauliflower to a plate and keep warm while you make the sauce. Do not fully clean the pan — the fond will add flavor to the sauce.

Coconut curry sauce

In the same skillet, lower heat to medium and add 1 tbsp coconut oil (or neutral oil). If pan looks dry, add a touch more oil.

Add the diced onion and cook, stirring occasionally, until softened and translucent, about 4–5 minutes.

Add the minced garlic and grated ginger and cook 30–45 seconds until fragrant, stirring to avoid burning.

Stir in 1 tsp curry powder and 1/2 tsp ground turmeric, toasting the spices for about 20–30 seconds until aromatic.

Mix in 1 tbsp tomato paste and cook 1 minute, then deglaze the pan with 1/2 cup vegetable broth, scraping up browned bits from the bottom with a wooden spoon.

Pour in 1 cup full-fat coconut milk, bring the mixture to a gentle simmer, and cook 3–5 minutes to thicken slightly.

Stir in 1 tbsp fresh lime juice and 1/2 tsp brown sugar (or maple syrup). Taste and season with 1/2 tsp kosher salt and 1/8 tsp black pepper; adjust to preference. If the sauce is too thick, add up to 2 tbsp water or broth to reach desired consistency.

Return the browned cauliflower to the skillet and toss to coat in the coconut curry sauce. Cook together 2–3 minutes until cauliflower is heated through and sauce clings to the florets.

Garnish & finishing

While the cauliflower simmers, toast the shredded coconut: heat a small nonstick skillet over medium heat, add 3 tbsp shredded coconut, and toast, stirring constantly, until golden brown and fragrant, 2–3 minutes. Remove to a small bowl to stop cooking.

If using dried curry leaves, crisp them in the small skillet for 20–30 seconds until fragrant (they will crackle). If using fresh leaves, briefly fry them in 1 tsp oil until they crisp; drain on paper towel.

Transfer the sauced cauliflower to a serving plate or shallow bowl. Sprinkle the toasted coconut evenly over the top, scatter the crisped curry leaves, and sprinkle chopped cilantro. If desired, add a pinch (1/4 tsp) red pepper flakes for heat and serve with lime wedges.

Serve warm as a snack or shareable. Leftovers keep 2–3 days refrigerated; gently reheat in a skillet over low heat, adding a splash of water if sauce has thickened.
