    Prep and toast whole spices

    Place a small dry skillet over medium heat. Once hot, add the fennel seeds and coriander seeds. Toast, shaking the pan frequently, for 1 to 2 minutes until fragrant and slightly darker but not burned. Remove to a small plate to cool. When cool, lightly crush the toasted fennel and coriander seeds with the bottom of a measuring cup or a mortar and pestle—leave some pieces coarse for texture.

    Toast almonds

    Wipe the same skillet clean and return to medium heat. Add the raw whole almonds in a single layer. Toast, stirring or shaking the pan every 30 seconds, for 6–8 minutes until they become fragrant and develop small blistered spots. Watch carefully to avoid burning. Transfer the warm almonds to a large mixing bowl.

    Combine oil and spices

    While the almonds are still warm, drizzle the extra-virgin olive oil over them and immediately add the crushed fennel and coriander seeds, ground cumin, red chili flakes, fine sea salt, and coarse black pepper. Toss thoroughly with a spatula or wooden spoon so the warm almonds pick up the oil and spices evenly.

    Finish and cool

    Taste and adjust seasoning: add up to 1/4 teaspoon more salt or a pinch more red chili flakes if desired. If using, grate the lemon zest over the almonds and toss to distribute. Spread the seasoned almonds in a single layer on a sheet of parchment or a rimmed baking sheet to cool completely; this helps them crisp rather than steam.

    Optional sweet-salty finish

    If you prefer a subtle sweet contrast (a classic Roman street-snack twist), lightly dust the cooled almonds with the optional powdered sugar and toss briefly to coat. The sugar will adhere in tiny patches to the oiled spice crust, creating a balanced sweet-savory finish.

    Storage

    Once completely cool, store the spiced almonds in an airtight container at room temperature for up to 2 weeks. Refresh the crunch by warming in a 300°F (150°C) oven for 5–7 minutes before serving, if desired.
