    Chill bed

    Spread crushed or shaved ice evenly over a serving platter or oyster half tray to create a stable, cold bed for the oysters. Keep the ice in the freezer until ready if possible.

    Shuck oysters

    Rinse oyster shells under cold water and scrub to remove debris. Hold oyster cupped-side down in a towel. Insert an oyster knife at the hinge, twist to pop open, run the knife along the top shell to release, remove top shell, then run the blade under the oyster to free it from the bottom shell while preserving its liquor. Place oyster in bottom shell on the ice bed. Repeat for all 12 oysters. Discard any oysters that do not smell fresh or that are open and do not close when tapped prior to shucking.

    Arrange oysters on the chilled ice bed with some spacing so guests can access each. Keep platter refrigerated or over fresh ice until ready to serve (no more than 30 minutes out at room temperature).

Citrus

    Cut 2 lemons in half. Use one half to squeeze fresh lemon juice as needed (reserve up to 2 tbs). Cut the other lemon into 6 wedges for garnish. Place wedges on the serving platter.

Maple Thyme

    In a small bowl, whisk together 3 tbs maple syrup, 2 tsp finely chopped fresh thyme, 1 tsp white wine vinegar, and a pinch of sea salt until well combined. Taste and adjust: add a few drops of lemon juice if you want more brightness or another pinch of salt to balance sweetness. Transfer to a small serving ramekin.

    For serving, give the maple thyme a gentle stir; it can be spooned sparingly over oysters (about 1/2 tsp per oyster) or provided for guests to add themselves.

Black Pepper Mignonette

    In a small mixing bowl, combine 3 tsp red wine vinegar with the finely minced shallot, 3 tsp coarsely cracked black pepper, 1 tsp granulated sugar, and a pinch of fine sea salt. Stir thoroughly and let sit for at least 5–10 minutes to allow the shallot to mellow and flavors to marry. Taste and adjust acidity or salt.

    Transfer the mignonette to a small ramekin for service. The coarse pepper should remain prominent; spoon about 1/2 tsp onto each oyster when serving or let guests add to taste.

House Hot Sauce

    Stir together 2 tsp prepared hot sauce, 1 tsp sriracha (optional), 1 tsp fresh lime juice, and a pinch of smoked paprika in a tiny bowl. Taste and adjust heat by adding more sriracha or hot sauce. Serve in a small dish so guests can add a drop or two to oysters.

Plating & Service

    Quickly wipe any excess liquid from the top edges of the oyster shells so garnishes sit neatly. On each oyster, you may pre-place a small dot (about 1/2 tsp) of either maple thyme or black pepper mignonette for variety, or leave all sauces in ramekins for guests to choose. Garnish the platter with lemon wedges and a sprig of fresh thyme if desired.

    Serve immediately with small forks, napkins, and the ramekins of Maple Thyme, Black Pepper Mignonette, House Hot Sauce, and extra lemon wedges. Keep remaining oysters on ice and discard any leftovers after 2 hours.
