If using store-bought sesame cornet cones, inspect them to ensure they are crisp and unbroken. If you prefer a slightly warmed cone, preheat oven to 300°F (150°C). Arrange cones on a baking sheet and warm for 2–3 minutes—do not brown. Let cool briefly. Optionally brush the inside very lightly with neutral oil for sheen.

Prepare crème fraîche mixture
In a small bowl combine 3 tablespoons crème fraîche, 1 teaspoon fresh lemon juice, 1 teaspoon finely grated lemon zest, 1 teaspoon finely chopped chives, 1 teaspoon finely chopped dill, a pinch of salt, and a pinch of freshly ground black pepper. Stir gently until homogeneous and chill for 5–10 minutes to let flavors meld. Taste and adjust seasoning very slightly; the mixture should be bright but not salty (caviar provides salt).

Using a small spoon or a piping bag fitted with a small round tip (or cut a small corner from a disposable bag), pipe or spoon approximately 1 tablespoon of the crème fraîche mixture into the bottom third of each sesame cone. Smooth the top so the surface is level and stable for the caviar.

Using a clean spoon (mother-of-pearl or bone preferred to avoid metallic taste), gently spoon 1 tablespoon of chilled Ossetra caviar onto the crème fraîche in each cone, forming a neat mound. Do not press—let the roe sit gently to preserve bead integrity.

Top each cone with a small sprig of dill or a few microgreens for color and aroma. Serve immediately on a chilled plate or in a cone stand with a lemon wedge on the side for guests who wish to add a faint brightness—advise to use very sparingly.

Serve the 3 caviar cones right away so cones remain crisp and caviar is at optimal temperature. Provide small mother-of-pearl spoons if available and recommend that each cone be eaten in one or two bites.
