    Shuck and chill oysters

    Keep oysters cold until ready to serve. Place a heavy kitchen towel on the work surface. Holding an oyster cup-side down in the towel, insert a blunt oyster knife into the hinge and twist firmly until the shell pops. Run the knife along the top shell to sever the muscle and remove the top shell, preserving as much liquor as possible. Slide the knife under the oyster meat to detach from the bottom shell. Rinse any grit quickly under cold running water if necessary. Place oysters on a tray of crushed ice to keep level and cold.

    Arrange 4 cups of crushed ice on a shallow serving platter or individual plates. Nestle the 6 shucked oysters, cup-side down, on the ice so they tilt slightly and retain their liquor. Break the lemon in half; cut one half into 6 wedges for guests and reserve remaining half for juicing into sauces as needed. Tuck thyme sprigs on the ice as a visual and aromatic garnish.

    Lightly sprinkle a pinch (about 1/8 tsp) of flaky sea salt or a small grind of coarse black pepper over each oyster if desired; most diners will add mignonette or hot sauce themselves.

Black Pepper Mignonette

    Make mignonette

    In a small bowl combine 3 tablespoons red wine vinegar, 1 tablespoon finely minced shallot, 1 teaspoon freshly cracked black pepper, 1 teaspoon granulated sugar, 1 teaspoon fine sea salt, and 1 teaspoon minced fresh thyme leaves. Stir until sugar and salt dissolve. Taste and adjust balance — it should be bright, slightly acidic with a peppery bite. Refrigerate for at least 10 minutes to let flavors marry; bring to near-chilled temperature before serving.

    Spoon a small amount (about 1/2 teaspoon) of the mignonette onto each oyster at service, or serve the mignonette in a small bowl so guests can add to taste.

House Hot Sauce

    Prepare house hot sauce

    In a small ramekin mix 2 tablespoons prepared hot sauce with 1 teaspoon melted unsalted butter and 1 teaspoon fresh lemon juice. Stir until emulsified; the butter rounds the heat and adds sheen. Keep at room temperature and offer alongside oysters so diners can spoon a few drops on each oyster as desired.
