Prepare the Cheese Sauce
In a saucepan over medium heat, melt 2 tablespoons of butter. Stir in 2 tablespoons of all-purpose flour and cook for 1 minute. Gradually whisk in 2 cups of milk until smooth. Cook until thickened, then add 2 cups of shredded cheese and stir until melted. Season with salt and pepper to taste.
Assemble the Nachos
On a large baking sheet, spread out the tortilla chips in an even layer. Top with the shredded chicken, pork, or brisket. Pour the house made cheese sauce generously over the top.
Add Toppings
Sprinkle pico de gallo, jalapeños, and fresh cilantro over the nachos. Drizzle with chipotle sour cream.
Bake
Preheat your oven to 350°F (175°C). Bake the assembled nachos for about 10-15 minutes until heated through and the cheese is bubbly.
Serve
