Prepare the Casings

Soak hog casings in cold water for at least 30 minutes before using. Rinse well and set aside.

Mix the Meat

In a large bowl, combine ground pork, ground beef, and pork fat. Mix well.

Add Spices

Add garlic powder, paprika, cayenne pepper, black pepper, salt, crushed red pepper flakes, and white vinegar to the meat mixture. Mix until well combined.

Stuff the Casings

Using a sausage stuffer, carefully stuff the meat mixture into the prepared hog casings. Twist into links of desired length.

Cook the Sausages

Preheat your grill or smoker to medium heat. Grill the sausages for about 15-20 minutes, turning occasionally, until cooked through and browned.
