Prepare the oven
Preheat your oven to 375°F (190°C).
Make garlic butter
Melt the butter in a small saucepan over low heat. Add minced garlic and sauté until fragrant, about 2 minutes. Remove from heat.
Season the fish
Place the Icelandic cod fillets on a baking sheet lined with parchment paper. Drizzle with the garlic butter and season with salt and black pepper.
Bake the fish
Bake the cod in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.
Prepare to serve
While the fish is baking, cut the lemon into wedges and chop fresh parsley.
Plate the dish
Once the fish is done, serve it on a plate with a side of tartar sauce, lemon wedges, and sprinkle with fresh parsley.
