Prepare the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove from skillet and drain on paper towels.

Toast the Bread

In the same skillet, lightly toast the Texas toast slices until golden brown on both sides.

Assemble the Cubano

On two slices of toasted Texas toast, layer half of the smoked pulled pork, two slices of crispy bacon, half of the cheddar cheese, and half of the pickles.

Add Sauce

Drizzle some Carolina mustard sauce over the layers.

Complete the Sandwich

Top with another slice of Texas toast and repeat the layering process for the second sandwich.

Grill the Sandwiches

Return the assembled sandwiches to the skillet and grill over medium heat, pressing down gently until the cheese melts and the bread is golden brown. Flip and repeat on the other side.

Serve

Slice the Cubano in half and serve hot with extra pickles and mustard sauce on the side.
