Prepare the Ingredients

Dice the chicken thighs and slice the sausage. Prepare the vegetables by dicing the onion, bell pepper, and celery, and mincing the garlic.

Cook the Chicken and Sausage

In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced chicken and sausage, cooking until browned on all sides (about 5-7 minutes). Remove and set aside.

Sauté the Vegetables

In the same pot, add the onion, bell pepper, celery, and garlic. Sauté for about 5 minutes until the vegetables are soft.

Add the Liquids and Spices

Pour in the chicken broth and add the diced tomatoes, bay leaves, thyme, paprika, cayenne pepper, salt, and black pepper. Stir well.

Combine and Simmer

Return the cooked chicken and sausage to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes, stirring occasionally.

Add Okra (if using)

If using okra, add it to the pot during the last 10 minutes of cooking.

Remove bay leaves. Serve the gumbo over cooked rice and garnish with sliced green onions.
