Make the Pineapple-Mango Salsa

In a bowl, combine diced pineapple, diced mango, lime juice, and a pinch of salt. Mix well and set aside.

Prepare the Jalapeño-Vinegar Slaw

In another bowl, mix shredded cabbage, sliced jalapeño, vinegar, and a pinch of salt. Toss to combine and let it sit for a few minutes.

Cook the Mahi Mahi

Season the mahi-mahi fillets with Cajun seasoning on both sides. Heat a skillet over medium-high heat and add a little oil. Cook the fillets for about 3-4 minutes on each side or until cooked through and flaky.

Make the Chipotle Sour Cream

In a small bowl, mix sour cream with chipotle sauce until well combined.

Assembly

Warm the flour tortillas in a dry skillet or microwave for a few seconds.

Layer the cooked mahi mahi on each tortilla, followed by the pineapple-mango salsa and jalapeño-vinegar slaw.

Drizzle with chipotle sour cream before folding the tacos.
