    Prepare mushrooms

    Clean mushrooms by wiping with a damp cloth and trim stems. Slice larger mushrooms so you have roughly uniform 1/4-inch pieces; smaller mushrooms can be halved or left whole.

    Heat a large sauté pan over medium-high heat. Add olive oil and 1 tbs butter. When butter foams, add the diced onion and cook, stirring occasionally, until translucent, about 4 minutes.

    Add minced garlic and thyme to the pan and cook 30 seconds until fragrant.

    Add mushrooms in a single layer (work in batches if necessary) and cook without stirring for 2 minutes to promote browning. Then stir and continue to cook until most moisture has evaporated and mushrooms are golden, about 6–8 minutes total.

    Deglaze the pan with sherry or dry white wine, scraping up browned bits. Let the alcohol reduce for 1 minute, then add the stock and simmer 2 minutes. Season with salt and pepper. Remove from heat and let cool slightly.

Cream and binding

    If using gelatin: sprinkle gelatin over 1 tbs cold water in a small bowl and let bloom 5 minutes. Heat gently (10–15 seconds) until dissolved and set aside to cool slightly but not set.

    Place the warm mushrooms into a food processor and pulse until finely chopped but not completely puréed — you want a smooth yet slightly textured base (about 10–12 pulses).

    Transfer mushroom mixture to a bowl and let cool to lukewarm. Add softened cream cheese and softened butter; stir or pulse briefly in food processor to combine until homogeneous.

    Whip the heavy cream to soft peaks (use a hand mixer or stand mixer). Fold about one-third of the whipped cream into the mushroom–cheese mixture to loosen it, then gently fold in the remaining whipped cream until fully incorporated. If using gelatin, stir it in now to distribute evenly.

Finish and garnish

    Taste and adjust seasoning with lemon juice, extra salt and pepper if needed. Stir in chopped chives and a few drops of truffle oil if using (do not overpower).

    Spoon the mousse into serving vessels: small ramekins, a piping bag, or a single larger terrine. Smooth the tops with a spatula or pipe decorative peaks.

    Chill in the refrigerator for at least 2 hours to firm up (or 30–45 minutes if not using gelatin but still chilled). If prepared ahead, cover tightly and refrigerate up to 3 days.

    Before serving, bring to just-cool (10–15 minutes at room temperature) for best texture. Garnish with microgreens or parsley, a sprinkle of chives, a light drizzle of truffle oil, and sea salt flakes.
