Smoked Huckleberry Syrup

    Combine and heat

    In a small saucepan combine 1 cup huckleberries, 3/4 cup granulated sugar, and 1/2 cup water. If you want an extra pronounced smoked note, add 1 teaspoon crushed lapsang souchong or a pinch of toasted wood-smoke salt. Stir to distribute.

    Bring the mixture to a gentle simmer over medium heat. Mash the berries with the back of a spoon or a small spatula to release juices and dissolve the sugar. Simmer, stirring occasionally, for 6–8 minutes until berries break down and syrup slightly thickens.

    Remove from heat and steep for 5 minutes to extract flavor. If you used tea leaves, strain the syrup through a fine-mesh sieve into a heatproof bowl, pressing solids to extract as much liquid as possible. Discard solids. Stir in 1 tablespoon fresh lemon juice to brighten the syrup.

    Cool to room temperature, then refrigerate until chilled. The syrup will keep in a sealed jar in the refrigerator for up to 10 days.

Cocktail Build

    Prepare glass

    Fill a highball or Collins glass with ice to chill. If desired, roll a lemon wheel along the rim and lightly press to add aroma.

    Mix base

    In a cocktail shaker or mixing glass filled with ice combine 1.5 oz bourbon or dark rum (or omit for a mocktail), 1 oz smoked huckleberry syrup, and 3/4 oz fresh lemon juice. Shake vigorously for 8–10 seconds to chill and combine.

    Assemble drink

    Discard ice from the chilled serving glass and fill with fresh ice. Strain the shaken mixture into the glass over the fresh ice.

    Top with 4 oz cold ginger beer, pouring gently to preserve carbonation. Give the drink one short stir (1–2 turns) to integrate the ginger beer with the syrup and spirit.

    Garnish with 6 fresh huckleberries (or blueberries) skewered on a pick, a lemon wheel or twist, and a piece of candied ginger if using. Serve immediately.

    To make a non-alcoholic Hucklberry Tangle: omit the spirit and increase smoked huckleberry syrup to 1.5 oz and lemon to 1 oz; proceed the same way.
