Overnight Coconut Oats

Mix oats base
In a bowl or jar with a tight lid, combine 1 cup rolled oats, 1 cup unsweetened canned coconut milk, 1/2 cup plain Greek or dairy-free yogurt, 1 tablespoon maple syrup or agave (optional), 1/2 teaspoon vanilla extract and a pinch of salt. Stir thoroughly to combine so all oats are moistened.

Cover the jar or bowl and refrigerate at least 4 hours but preferably overnight (8 hours) so oats soften and absorb the coconut milk.
Chia Berry Jam

Cook berries (if using frozen or you prefer warm jam)
Place 1 cup mixed berries and 1 tablespoon maple syrup or agave in a small saucepan over medium heat. Cook, stirring occasionally, until berries break down and release juices, about 4–6 minutes. Lightly mash with the back of a spoon if you want a thicker jam texture. (If using fresh berries and preferring a raw jam, skip this cooking step.)

Finish jam with chia
Remove from heat (if cooked) and stir in 2 tablespoons chia seeds and 1 teaspoon lemon juice. Let mixture sit 10–15 minutes so chia seeds swell and thicken the mixture. Stir again; refrigerate until chilled if desired. Taste and add extra sweetener if needed.
Fruit & Assembly

Prepare fruit
Slice or chop 1 cup of fresh fruit for layering (bananas, kiwi, and extra berries work well).

Layer the parfait
Using 2 serving glasses or jars, divide the overnight coconut oats evenly between them as the first layer (about half of the oat mixture per jar). Spoon a generous tablespoon or two of chia berry jam over the oats, followed by a layer of fresh fruit (about 1/4 cup per jar). Sprinkle with a portion of granola (approx. 2 tablespoons per jar) and a few toasted coconut flakes.

Repeat layers if your jars are tall: another thin oat layer, more chia jam, fruit, and a final sprinkle of granola and coconut flakes on top.

Finish with agave
Drizzle about 1/2 tablespoon agave syrup over each assembled parfait (total ~1 tablespoon) for extra shine and sweetness.

Serve immediately if you want crunchy granola, or refrigerate up to 4 hours to let flavors meld (note granola will soften if stored).
