    Make the sausage patty

    In a bowl combine ground pork, roasted poblano (finely diced), minced garlic, kosher salt, black pepper, smoked paprika and brown sugar. Mix gently until just combined; avoid overworking. Form into a single 3/4-inch thick patty roughly the diameter of your bun.

    Cook the sausage patty

    Heat a nonstick or cast-iron skillet over medium heat and add a thin film of oil. When hot, add the sausage patty and cook 4–5 minutes on the first side until browned. Flip and cook another 3–4 minutes, pressing slightly to make good contact, until internal temperature reaches 160°F (71°C). In the last 1 minute of cooking, place the cheddar slice on top of the patty to melt slightly (cover pan for quicker melting). Remove patty and keep warm on a plate tented with foil.

    Cook the over-medium egg

    Wipe the skillet if needed and reduce heat to medium-low. Add 1/2 tbsp butter (or oil). Crack the egg into the pan and cook until whites are mostly set, about 2–3 minutes. Gently flip and cook 30–60 seconds for over-medium (yolk slightly set but still a little jammy). Season with a pinch of salt and pepper. Remove and keep warm.

    Prepare mayo and avocado

    In a small bowl mix the mayonnaise with a tiny pinch of salt to taste. In another bowl mash the avocado with a fork, season with 1/8 tsp salt and a light grind of black pepper.

    Assemble pepper and cheese components

    Drain any excess liquid from the sliced marinated cherry peppers. Have the cheddar melted on the patty (from earlier). If you like a little extra heat, reserve a few thin slices of cherry pepper for topping.

Bread & Finish

    Toast the bun

    Wipe the skillet, add remaining 1/2 tbsp butter and set skillet over medium heat. Place cut sides of the bun down and toast until golden, about 1–2 minutes. Remove from heat.

    Assemble the sandwich

    Spread the mayonnaise on the bottom bun and the mashed avocado on the top bun (or vice versa, your preference). Place the cheddar-topped poblano sausage patty on the bottom bun. Add the over-medium egg on top of the patty. Scatter sliced cherry peppers over the egg, add optional cilantro if using. Close with the top bun.

    Serve immediately while warm. If desired, wrap in parchment and press lightly to hold the sandwich together for handheld eating.
