    prepare bread

    Lightly toast the 4 pumpernickel slices until just crisp at the edges but still slightly pliable, about 1–2 minutes per side in a dry skillet or under a broiler. Transfer to a platter to cool slightly.

Dill Cream Cheese

    make dill cream cheese

    In a medium bowl, add the softened cream cheese, 2 tbsp finely chopped dill, 1 tsp lemon zest, 1 tsp lemon juice, 1/2 tsp grated garlic, 1/2 tsp salt, and 1/4 tsp black pepper. Whip with a spatula or small whisk until smooth and evenly combined, scraping down the sides. Taste and adjust salt or lemon as desired.

    Evenly spread about 2 oz (roughly 2 tbsp) of the dill cream cheese on each toasted pumpernickel slice, creating a smooth, even layer that will anchor the toppings.

Lemon Oil & Finish

    make lemon oil

    Whisk together 3 tbsp extra-virgin olive oil and 1 tsp fresh lemon juice in a small bowl. Season with 1/4 tsp sea salt flakes and 1/4 tsp freshly ground black pepper. This is the lemon oil dressing.

Toppings

    prepare vegetables & eggs

    Thinly slice the tomato and very thinly slice half a red onion into rings. Peel and halve the 2 hard-boiled eggs lengthwise. If using capers, rinse briefly and drain.

    On each cream-cheese–spread pumpernickel slice, arrange a layer of 2–3 thin tomato slices (or enough to cover), then drape 2 oz of thinly sliced house-cured lox over the tomato. Tuck a few thin red onion rings on top of the lox. Place two egg halves on two of the slices (one egg per slice is also fine) or quarter the eggs and distribute evenly across all slices.

    Lightly drizzle each assembled slice with the prepared lemon oil (about 1/2 tsp per slice). Sprinkle each piece with everything bagel seasoning (~1/2 tsp each) and scatter capers sparingly if using. Garnish with a small dill sprig on each slice for color. Adjust final seasoning with a small pinch of salt and a twist of black pepper to taste.
