Prep
If using refrigerated or frozen yakisoba noodles, separate them gently with your fingers. If frozen solid, microwave for 30–60 seconds or stir under hot water to loosen. Pat dry if very wet.
Combine soy sauce, Worcestershire sauce, oyster sauce, ketchup, mirin, sesame oil, sugar and black pepper in a small bowl. Stir to dissolve sugar and set sauce aside.
Thinly slice the chicken into bite-sized strips. Lightly season with 1 tsp salt and toss with 1 tsp potato starch or cornstarch so pieces get a slight coating.
Prepare vegetables: thinly slice cabbage and onion, julienne the carrot, slice scallions on the bias, and rinse/dry bean sprouts if using.
Cook Protein
Sear Chicken
Heat 1 tablespoon vegetable oil in a large heavy skillet or wok over medium-high heat until shimmering. Add the coated chicken pieces in a single layer and sear without moving for 1–2 minutes to develop color, then stir-fry until cooked through (about 3–4 minutes total). Transfer chicken to a plate and set aside.
Cook Vegetables
Add the remaining 1 tablespoon vegetable oil to the same pan and return to medium-high heat. Add the sliced onion and carrot and stir-fry 1–2 minutes until they start to soften.
Add the cabbage and continue to stir-fry 2–3 minutes until cabbage is wilted but still has slight bite. If using bean sprouts, add them in the last 30–45 seconds so they remain crisp.
Combine Noodles & Sauce
Return the cooked chicken and any accumulated juices to the pan with the noodles and vegetables. Pour the prepared sauce evenly over everything.
Toss constantly for 1–2 minutes so the sauce coats the noodles, chicken, and vegetables. If the pan looks dry, splash up to 1–2 tbs water or chicken stock to help distribute the sauce and prevent sticking.
Taste and adjust seasoning: add a pinch more salt or 1/2 tsp soy sauce if needed, or a small splash of Worcestershire for tang.
Finish & Serve
Turn off the heat. Stir in sliced scallions and a drizzle of sesame oil if desired. Toss once more to combine.
Divide yakisoba into 2 generous bowls (serves 2). Top each bowl with a spoonful of beni shoga (pickled ginger), a sprinkle of aonori and toasted sesame seeds, and katsuobushi if using. Add a light dusting of togarashi or cracked pepper to taste.
Serve immediately while hot.
