Prepare aromatics
Peel the ginger and smash or thinly slice it. Smash and lightly crush the garlic cloves with the flat side of a knife (no need to finely chop).
In a large pot, heat 1 tablespoon vegetable oil over medium heat until shimmering. Add the garlic and sliced ginger and sauté 30–45 seconds until fragrant but not browned.
Add the vegetable broth and 1 cup water to the pot and bring to a gentle simmer.
Stir in soy sauce, rice vinegar, sesame oil, brown sugar (or maple syrup), crushed red pepper flakes and 1/2 teaspoon salt. Taste and adjust seasoning — add more soy sauce for saltiness, more vinegar for brightness, or a pinch more sugar to balance acidity.
Reduce heat to low and simmer partially covered for 10–12 minutes to let flavors meld. Keep warm while preparing the rest of the bowl.
Noodles & Vegetables
Bring a separate pot of water to a boil for the noodles. Cook the noodles according to package instructions until just al dente (usually 3–5 minutes for ramen/udon). Drain, rinse briefly under hot water to remove excess starch and prevent sticking, then set aside. If serving later, toss with a teaspoon of oil to keep them separated.
In a wide skillet or wok, heat 1 tablespoon vegetable oil over medium-high heat. Add mushroom slices and the white parts of scallions; sauté 3–4 minutes until mushrooms release moisture and begin to brown.
Add baby bok choy halves cut-side down and cook 1–2 minutes to wilt slightly, then flip and cook another minute until leaves are tender and stems are just cooked through.
Turn off heat and stir in the fresh spinach or baby greens; residual heat will wilt them quickly. Remove skillet from heat.
Assembly & Toppings
Divide the cooked noodles evenly among 4 bowls (serves 4).
Ladle the hot broth over the noodles, filling each bowl about three-quarters full so noodles are submerged and vegetables remain visible.
Arrange the sautéed vegetables on top of the noodles and broth.
Garnish each bowl with sliced scallion greens, toasted sesame seeds, chopped cilantro or Thai basil, and a lime wedge. Offer chili oil or sriracha at the table to add heat to taste.
Serve immediately while hot. Squeeze lime over bowl before eating for brightness.
