Prepare vegetables: finely shred the cabbage, grate the carrot, finely mince the lemongrass, mince garlic and grate ginger, and thinly slice green onions.

If using regular cabbage, toss shredded cabbage with a pinch of salt and let sit 5 minutes, then squeeze out excess liquid in a clean towel or between hands. This prevents a watery filling.

In a mixing bowl combine ground chicken, minced lemongrass, green onions (reserve 1 tsp for sauce garnish if desired), drained cabbage, grated carrot, garlic, ginger, soy sauce, sesame oil, rice wine, salt, white pepper and cornstarch.

Mix the filling thoroughly with a spoon or your hands until sticky and well combined (about 1–2 minutes). Taste a small cooked bit of filling in a skillet and adjust seasoning if necessary.

Wrappers & Assembly

Set up an assembly station: wrappers on one plate covered with a damp towel to keep them from drying, filling bowl, small dish of water for sealing, and a baking sheet or plate lined with parchment to hold finished potstickers.

Place one wrapper in your palm. Put about 1 teaspoon to 1 tablespoon (depending on wrapper size) of filling in the center — enough to mound slightly but leave room at edges. For 24 wrappers use roughly 1 level teaspoon for smaller wrappers or 1 tablespoon for larger to yield 24 potstickers.

Dip your finger in water and lightly moisten the edge of the wrapper. Fold in half to enclose filling and press to seal at one edge, then pleat the outer edge to create a tight seal (traditional potsticker pleat) or simply press edges firmly together. Ensure no air pockets remain.

Place assembled potstickers seam-side up on the prepared sheet. Repeat until all wrappers or filling are used. Keep finished potstickers covered with a damp towel if not cooking immediately to prevent drying.

Cooking Potstickers (Pan-Fry + Steam)

Heat a large nonstick or cast-iron skillet over medium-high heat. Add 1 tablespoon neutral oil and swirl to coat a 10–12 inch skillet.

Arrange potstickers in the skillet seam-side up (so the pleat side becomes the crisp bottom). Do not overcrowd — cook in batches if necessary. Fry until bottoms are golden brown, about 2–3 minutes.

Carefully add 1/4 cup water to the hot skillet (for a single batch of about 12 potstickers). Immediately cover with a tight-fitting lid to trap steam. Reduce heat to medium-low and let steam for 5–6 minutes, or until water has evaporated and filling is cooked through (internal temperature for chicken should reach 74°C / 165°F).

Remove lid and continue cooking another 1–2 minutes to re-crisp the bottoms if needed. Transfer cooked potstickers to a serving plate and keep warm while finishing remaining batches (add remaining 1 tablespoon oil before next batch).

Dipping Sauce

While potstickers cook, combine 2 tablespoons soy sauce, 1 tablespoon black or rice vinegar, 1/2 teaspoon sesame oil, and 1/2 teaspoon chili oil (optional) in a small bowl.

Stir in sliced green onion reserved from filling and taste; adjust soy/vinegar balance or add a pinch of sugar if you prefer a milder tang.

To Serve

Arrange potstickers on a platter with the crispy browned side up. Serve immediately with dipping sauce on the side. Garnish with extra sliced green onion or sesame seeds if desired.
