Prepare aromatics

Heat a medium saucepan over medium heat. Add the extra-virgin olive oil and heat until shimmering (about 30 seconds). Add the finely diced onion and a pinch of salt; cook, stirring occasionally, until the onion is translucent and beginning to soften, about 5–6 minutes. Add the minced garlic and cook, stirring constantly, until fragrant, about 30–45 seconds (do not let it brown).

Build the sauce

Stir in the tomato paste and cook 1 minute to deepen the flavor. Add the crushed tomatoes, dried oregano, crushed red pepper flakes, granulated sugar, kosher salt, and freshly ground black pepper. Stir to combine and bring the mixture to a gentle simmer over medium-low heat.

Simmer

Reduce heat to low so the sauce maintains a gentle simmer. Partially cover and simmer, stirring occasionally, until the flavors meld and the sauce thickens slightly, about 18–25 minutes. If the sauce becomes too thick, stir in up to 2 tablespoons of water (or reserved pasta water) to reach a pourable consistency suitable for a pint container.

Finish with basil

Remove the pan from heat and stir in the torn fresh basil leaves. Taste and adjust seasoning with additional salt, pepper, or a pinch more sugar if the tomatoes are very acidic.

For a silkier, richer sauce, return the pan to very low heat and whisk in the unsalted butter a little at a time until fully melted and incorporated. Stir in the grated Parmesan until melted. Do not boil once butter and cheese are added. This step is optional but recommended if the sauce will be used on plain pasta.

Allow the sauce to cool slightly (5–10 minutes) so steam does not build excessive pressure in the to-go container. Transfer the warm sauce into the pint container, leaving about 1/2 inch headspace. Wipe the rim clean, seal with the lid, and label with date and reheating instructions.

Storage and reheating: Refrigerate up to 5 days or freeze up to 3 months. To reheat, thaw if frozen, then warm gently on the stovetop over low heat, stirring occasionally until heated through. If thickened after refrigeration, loosen with splash of water or reserved pasta water.
