Prep vegetables and protein
Mince the garlic, grate the ginger, thinly slice the scallions separating whites and greens, thinly slice the red pepper, julienne the carrot, and wash the spinach/pak choi. If using tofu, press it for at least 15 minutes and cut into 1/2-inch cubes; if using chicken, slice thinly across the grain. Set aside.
Make sauce
In a bowl, whisk together soy sauce, hoisin, sesame oil, oyster sauce (if using), brown sugar or honey, rice vinegar, and Sriracha until smooth. Taste and adjust balance (add a little more soy for salt, more sugar for sweetness, or more vinegar for brightness). Reserve 3 tablespoons of the sauce separately for tossing after grilling.
Cook Noodles
Bring a large pot of salted water to a boil. Add the dried noodles and cook 1–2 minutes less than package directions so they are slightly underdone (al dente). Drain and immediately toss with 1 teaspoon neutral oil to prevent sticking. Spread noodles on a rimmed sheet pan or large plate in a single layer so they cool slightly and separate.
Grill Assembly
Preheat a grill or grill pan to medium-high (about 400°F / 200°C). Oil the grill grates or pan well to prevent sticking.
If using skewers or a grill-safe tray: For an easy method, divide noodles into 4 compact nests on a piece of lightly oiled foil or a flat grill-safe tray and press each into a tight round patty about 1/2-inch thick. Brush both sides with a thin coat of neutral oil. Alternatively, you can form the nests around metal ring molds placed on the grill.
Grill Noodles & Protein
Place the noodle patties on the hot grill. Cook 3–4 minutes per side until grill marks form and the exterior is crisping. Flip carefully with a spatula. During the last minute of grilling, brush the exposed side with 1 tablespoon of the reserved sauce.
If grilling tofu or chicken: Toss the protein with 1 tablespoon neutral oil, a pinch of salt and pepper, and a tablespoon of the sauce. Grill on direct heat until cooked through and slightly charred — about 2–3 minutes per side for thin chicken slices, 3–4 minutes per side for tofu — moving them to indirect heat to finish if needed. Remove and keep warm.
Stir-Fry Vegetables

While noodles grill, heat 2 tablespoons neutral oil in a large skillet or wok over high heat. Add the white parts of the scallions, minced garlic, and grated ginger; stir-fry 30 seconds until fragrant.
Add red bell pepper and carrot; stir-fry 2–3 minutes until slightly tender but still crisp. Add spinach or pak choi and cook 1 minute until wilted. Pour the remaining sauce (except the reserved 3 tablespoons) into the pan, toss to coat and bring to a quick simmer. Add the grilled protein and toss to combine so everything is evenly sauced.
Finish & Serve
If you formed noodle patties: top each grilled noodle patty with a portion of the vegetable–protein stir-fry. If you grilled noodles directly on grates without compacting: transfer grilled noodles to the pan with vegetables, toss gently with the sauce to combine and heat through, then divide among plates.
Garnish with scallion greens, toasted sesame seeds, chopped cilantro, a squeeze of lime, and a crack of black pepper. Serve immediately so the noodles remain crisp on the outside with tender fillings inside.
