Prep & Cook
Bring water to boil
Place 4 cups of water and 1 teaspoon kosher salt in a medium saucepan and bring to a rolling boil over high heat.
Cook edamame
Add 1 cup frozen edamame (in pods) to the boiling water. Return to a boil and cook uncovered for 4โ5 minutes until pods are bright green and beans inside are tender but still slightly firm. If using thawed fresh edamame, reduce to 3โ4 minutes.
Drain and shock
Drain the edamame in a colander and optionally transfer immediately to a bowl of ice water for 1 minute to stop cooking and preserve color. Drain thoroughly and pat dry with a clean kitchen towel or paper towels.
Seasoning & Serve
While pods are still warm, place them in a serving bowl. Drizzle 1 tablespoon toasted sesame oil over the pods and toss gently to coat.
Sprinkle the warm pods with 1 teaspoon flaky finishing salt (or sea salt) and 1 teaspoon freshly ground black pepper. If you prefer heat, add 1/4 teaspoon red pepper flakes. Toss briefly so seasoning adheres.
Serve immediately with lemon or lime wedges on the side for squeezing over the pods, if desired. To eat, pop the beans out of the pods with your teeth and discard the pods.
